My love for Ethiopian food goes back to 1995 when I was in college. We took the bus down to Brooklyn from upstate New York, which was a four hour ride. The first thing I had was Doro Wat, stewed chicken and hard boiled eggs on Injera; the redness of the stew from the spice Berbere, but I also dipped my food in Mitmita. Fast forward to present day, and I travel a lot. Every city I go to, I look for an Ethiopian/Eritrean restaurant and have a favorite in just about every city I go. This time I’m in Houston, Texas; it’s late, I’m tired, and LUCY, the Ethiopian restaurant I usually go to is far enough away that I don’t want to leave the hotel, so I open up the seamless app. I can’t believe it when I see Blue Nile Ethiopian restaurant as one of the delivery options. I ordered my favorite dish, Tibs Fit Fit, cubes of beef sautéed with onions, mixed with pieces of Injera, and then laid on top of Injera. I’m not religious, but this is heaven.
